Berry Oatmeal Bars

Prep: 15 minutes     Cook: 25 minutes     Servings: 9


  • 3/4 cup + 2 Tablespoons Small Batch Kitchen Balsamic Strawberry spread
  • 1/4 cup Nutty Novelties White Chocolate Walnut Butter
  • 1 1/4 cup (157g) all purpose flour
  • 1 cup (90g) old fashioned oats
  • 1/2 teaspoon baking soda
  • 10 Tablespoons (141g) salted butter, melted
  • 1/2 cup (110g) light brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons vegetable oil
  • 1 teaspoon water
  1. Preheat oven to 350 degrees F. Place parchment paper in the bottom of an 8x8 pan (without overhang)

  2. In a medium bowl combine flour, oats, and baking soda

  3. In a large bowl whisk together the butter, oil, brown sugar, water, and vanilla until well combined (about 1 minute)

  4. Add dry ingredients to the wet ingredients slowly and stir until well combined

  5. Once everything is well mixed, add in the White Chocolate Walnut Butter and mix well

  6. Set aside about 3/4 cup of the dough and place in refrigerator (will be used as topping at the end)

  7. Pour the rest of the dough into the prepared pan and press it down into a flat, even layer. Bake for 10 minutes

  8. Remove from oven and carefully spread the Small Batch Kitchen Balsamic Strawberry spread on top of the cookie base

  9. Take the reserved cookie dough from earlier and crumble it over top of the Balsamic Strawberry spread

  10. Return to the oven and bake for 15-18 minutes, or until the topping is a light golden brown. The oatmeal bars will be soft when removed and firm up as they set
